Ingredients for making Matar Gujiya

  • Refined flour - 1- 1/2 cup
  • Semolina - 3 tablespoons
  • Salt - 1/2 teaspoon
  • Ghee - 3 tablespoons
  • Water - as required
For stuffing
  • Boiled Peas - 2 cups
  • Grated Paneer - 1/2 cup
  • Grated Coconut - 1/2 cup
  • Green Chili - 2
  • Roasted Cumin - 2 tsp
  • Asafoetida - 1/2 teaspoon
  • Carom seeds - 2 tablespoons
  • Finely chopped coriander leaves - 1/2 cup
  • Finely chopped mint leaves - 4 tsp
  • Lemon juice - 1 teaspoon
  • Salt - as per taste
  • Oil - As required

Method of Making Matar Gujiya


  • Put maida, semolina, salt, and ghee in a vessel and mix well. Knead with the help of water as required. 
  • Cover the kneaded mixture and leave it for half an hour. 
  • Grind coconut, green chilies, coriander leaves, mint leaves, and cumin seeds in a mixer-grinder. Do not use water for grinding at all. 
  • Drain the peas completely.
  • Add the peas, cottage cheese, coconut mixture, carom seeds, salt, and lemon juice to a pan and mix well. 
  • Heat oil in a pan. 
  • Cut a small portion of the dough and roll it whole using a little oil. Do not use dry flour for rolling. Put a little pea mixture in the center of the puri. Fold the whole into the shape of a half-moon. 
  • Thoroughly seal the edges. Prepare Matar gujiya with all the flour. Pour in hot oil and fry until golden. Serve hot
